At these temperatures the dough is shocked and springs into a light, airy crust while taking on a lightly charred appearance. The Pizzaiola (Pizza Maker & Oven Manager) must manage the oven at all times. A perfectly cooked pizza pie crust will have a smokey, crisp flavor.
The ingredients we use are of the highest quality. We use fresh whole milk mozzarella cheese by Polly-O, savory San Marzano tomatoes imported from Italy, Coscioppo Bros. handmade sausage and hand-picked vegetables. Our toppings are chosen for their intense flavor, so we recommend that you select only a few for your pizza so as to taste them each individually.
